Jeremy's Vegetable Stock Take whatever vegetables are in the crisper. Best to have some root veg and some leaf veg, carrots, celery. Add fruit, like lemons, but not too much. Use chili peppers, but again not too much. Use herbs, but be mindful of results (e,g, coriander). Use whole spices. Coarsely chop everything but leaf veg, herbs, and most spices--use those whole. (Chop ginger.) Put in stock pot, covering with water. Keep track of how much water added. Add no more than 1/8 teaspoon per cup of water, assuming you do a light simmer and don't lose too much water. Stir. Bring to boil. Reduce heat to just barely simmering. Cook for 3 hours. Drain, cool, divide into 1 and 0.5 cup containers. Freeze, refridgerate, or use.
